HOW TO SHUCK OYSTERS
Our fishmongers will gladly shuck your oysters for
you, including the shells on the side. But if you’re in
the mood to try it, it’s easy—all you need is the right
technique and proper equipment. Follow this
step-by-step guide from Citarella Owner Joe Gurrera.
You'll be a pro in no time.


1. Using an oyster knife, insert
the blade into the top part of
the shell, near the hinge,
inserting it about halfway.


2. Hold the oyster in your
hand so the nook faces toward
the tip of your pointer finger,
then twist the knife.


3. Run the blade along the top
shell, scraping it to release the
meat. Separate the shells and
serve the oyster as desired.
