Winter Crab Tian

We love crab anyway you prepare it. In this simple but delicious dish, the tartness of the citrus complements the sweetness of the lump crabmeat to deliver a bright, fresh flavor you’ll really enjoy as a starter or light entrée.
Ingredients
- 1 lb. fresh lump crabmeat
- 2 Tbsp Citarella olive oil
- 1 Tbsp lemon juice
- 1 clove garlic, grated finely
- 1 tsp honey
- 1 avocado, small diced
- 1 grapefruit, segmented
- 1 blood orange, segmented
- 2 Tbsp fresh chives, minced, for garnish
- Edible flowers, for garnish
- Salt and pepper, to taste
Instructions
- In a small bowl, whisk together olive oil, lemon juice, grated garlic, honey, salt, and pepper. Toss crab with dressing and set aside.
- Using a glass or ring mold on a plate, build your dish, starting with a few slices of segmented citrus, and season with salt and pepper. Next, add diced avocado, and season with salt and pepper. Top with crab mixture, and finish with fresh minced chives.
- Drizzle with any remaining dressing, garnish with an edible flower and enjoy!
