Lobster Salad Club Sandwich

Summer, meet your new favorite twist on the club sandwich. Our fresh Lobster Salad is the star, served on our soft Country Pullman bread with bright Lemon Mustard Aioli. And crispy bacon. And creamy avocado. And lush, colorful slices of heirloom tomatoes. It’s a sandwich worthy of an occasion, but easy enough to make whenever you’d like.
Ingredients
- 12 slices of Citarella Country Pullman Loaf, sliced ½-inch thick
- 4-6 Tbsp. Citarella Lemon Mustard Aioli
- 12 slices thick bacon, crisp
- 2 ripe heirloom tomatoes, thinly sliced
- 8 lettuce leaves (preferably Boston)
- 1 lb. Citarella Lobster Salad
- Salt and pepper, to taste
- 1 ripe avocado—peeled, quartered, and thinly sliced
Instructions
- Lightly toast the bread and spread the aioli on one side of each slice. Top 4 slices of bread each with 3 pieces of bacon, followed by ¼ of the tomato slices and two lettuce leaves. Scoop 1/8 of the lobster salad on top and season lightly with salt and pepper.
- Place a second slice of bread on each sandwich, aioli side-down. On this layer, divide the sliced avocado among the four sandwiches. Top with the remaining lobster salad and the last four slices of prepared toast, aioli side-down. Press firmly on the top of the sandwich, cut in half, and serve.
