Grilled Romaine Salad with Olives and Herbs

SERVES:    4-6

PREP TIME:   5 minutes

TOTAL TIME:   15 minutes

COURSE:  Starter

Grilling fresh Romaine hearts produces a nice char – and that always means extra flavor. The addition of a bright vinaigrette, briny olives, and savory Parmigiano enhances the dish to create an utterly delicious starter or side.


  Ingredients

  • 3 Romaine hearts
  • 1/4 cup Olive Oil, divided
  • 1 Tbsp Dijon mustard
  • 2 Tbsp apple cider vinegar
  • 1/8 tsp Worcestershire sauce
  • 1/2 cup pitted Citarella Judea olives, roughly chopped or torn
  • 1 Tbsp fresh chives, minced
  • 1/2 cup parmigiano, shaved into ribbons using a vegetable peeler
  • Salt and pepper, to taste

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Slice Romaine hearts in half lengthwise, rub with one tablespoon olive oil, and season with salt and pepper. Grill for 2 minutes per side to get a nice char. Transfer to serving platter and allow to cool slightly.
  3. Meanwhile in a small bowl, mix together remaining olive oil, mustard, Worcestershire, and vinegar. Season with salt and pepper.
  4. Drizzle vinaigrette over grilled romaine, top with olives, shaved parm, and fresh minced chives.
