Grilled Romaine Salad with Olives and Herbs

Grilling fresh Romaine hearts produces a nice char – and that always means extra flavor. The addition of a bright vinaigrette, briny olives, and savory Parmigiano enhances the dish to create an utterly delicious starter or side.
Ingredients
- 3 Romaine hearts
- 1/4 cup Olive Oil, divided
- 1 Tbsp Dijon mustard
- 2 Tbsp apple cider vinegar
- 1/8 tsp Worcestershire sauce
- 1/2 cup pitted Citarella Judea olives, roughly chopped or torn
- 1 Tbsp fresh chives, minced
- 1/2 cup parmigiano, shaved into ribbons using a vegetable peeler
- Salt and pepper, to taste
Instructions
- Preheat grill or grill pan to medium-high heat.
- Slice Romaine hearts in half lengthwise, rub with one tablespoon olive oil, and season with salt and pepper. Grill for 2 minutes per side to get a nice char. Transfer to serving platter and allow to cool slightly.
- Meanwhile in a small bowl, mix together remaining olive oil, mustard, Worcestershire, and vinegar. Season with salt and pepper.
- Drizzle vinaigrette over grilled romaine, top with olives, shaved parm, and fresh minced chives.
