A slice of salmon royalty, king salmon are caught seasonally off the Pacific coasts of Oregon and Washington typically from April through October. These are the largest salmon in the ocean (the largest on record came in over 100 pounds). King salmon is exquisitely fatty—rich in flavor, velvety in texture, and offering big soft flakes. And each boldly colored, deeply flavorful fillet from Citarella is delicious evidence of why this is the king of wild salmon.
Brown this King Salmon fillet in our Olive Oil from Sicily and pair with fresh vegetables. A charred cedar serving board can offer it a smoky regalia.
Portion Size
When serving our Wild King Salmon we recommend 1 portion per person. We recommend 6-8 ounces raw weight per person when serving fish fillets and steaks. The size of this order is 2 portions (approx. 6-8 ounces per portions), which serves approx. 2 people.
