Truffle and Robiola Grilled Cheese Bites

These grilled cheese bites are a study in luxury, from the chopped fresh truffles — plus a decadent drizzle of white truffle oil — to the creamy robiola cheese. Placing an extra baking sheet on top of the sandwiches helps keep them flat in the oven and yields a gorgeously crispy exterior. Once they’re cooked, cut them into squares for an unforgettable hors d'oeuvre.


Ingredients

  • 6 oz. package Robiola Osella cheese
  • 3 Tbsp. Urbani white truffle oil, plus more for drizzling
  • 2 Tbsp. chopped truffles, fresh or canned (optional)
  • Salt and pepper, to taste
  • 12 slices pain de mie, white bread, or brioche loaf
  • Olive oil baking spray

Instructions

  1. Preheat the oven to 350°F.
  2. Mix cheese, oil, and truffles. Season. Lay out 6 slices of bread.
  3. Spread mixture evenly on each piece of bread and top with remaining 6 slices.
  4. Spray nonstick baking spray on a baking sheet (generously). Place sandwiches on top and spray again (directly on bread).
  5. Place another baking sheet on top of sandwiches and bake for 12-15 minutes until golden-brown.
  6. Remove from baking sheet and cut into 1.5-inch squares. Drizzle extra white truffle oil on top and serve.
