Rotisserie Chicken Salad with Mango and Miso Dressing

Hearty rotisserie chicken meets sunny mango and juicy tomatoes in this summer-ready salad. It couldn’t be more simple to pull together — just make the dressing, prep the salad ingredients, and toss everything together to create a vibrant, colorful meal. Speaking of the dressing: It includes savory miso, sweet honey, and a few other key ingredients for irresistibly bold flavor. Keep it on file for other salads, too. Ingredients
Miso Dressing:- 3 Tbsp miso paste
- 3 Tbsp honey
- 2 Tbsp Dijon
- 1/3 cup rice wine vinegar
- 1 Tbsp soy sauce
- ½ cup water
- 8 oz shredded rotisserie chicken
- 4 oz roasted julienne of bell peppers
- 6 oz of cut grape tomatoes
- 4 oz of coleslaw vegetable mix
- 4 oz julienne of fresh mango
- 3 oz red onion thinly sliced
- 4 cups of clean Boston or mixed salad greens
- ¼ cup cilantro leaves (optional)
- 4 Tbsp Lars imported crispy onions (optional)
Instructions
- Make the Miso Dressing: Place all ingredients in a blender and mix until fully emulsified.
- Assemble the Salad: Place all ingredients except the crispy onions in a large mixing bowl. Toss with miso dressing. Serve on a platter or individual bowls. Sprinkle crispy onions on top.
