Rotisserie Chicken Grain Bowl with Lemon-Tahini Dressing

Shredded rotisserie chicken anchors this satisfying grain bowl, surrounded by a colorful mélange of roasted vegetables and tender chickpeas. To contrast the savory elements, we mix in golden raisins for a fruity note, along with our Caramelized Pecans for a sweet, buttery crunch. We also included creamy feta for a tangy pop — all mixed with crisp endive and arugula, this dish is a gorgeous combination of texture and flavor. To tie it together, we paired it with a bright, savory Lemon-Tahini Dressing.


Ingredients

Grain Bowl:
  • 8 oz of shredded rotisserie chicken
  • 6 oz of roasted cauliflower
  • 4 oz of roasted carrots
  • 5 oz of diced roasted beets
  • 4 oz cooked chickpeas
  • 3 oz golden raisins
  • 4 oz Citarella caramelized pecans
  • 3 cups cleaned arugula
  • 2 endives sliced
  • 3 oz crumbled feta
  • Fresh parsley and basil (optional)
  • Salt & pepper to taste.
Lemon-Tahini Dressing:
  • 2 Tbsp Dijon
  • 1 Tbsp Worcestershire sauce
  • 1.5 Tbsp sherry vinegar
  • Juice of 1.5 lemon
  • 2 Tbsp grated Parmesan
  • 1 Tbsp honey
  • 2 cloves of roasted garlic
  • 1/3 cup tahini
  • ½ cup extra virgin olive oil

Instructions

  1. For the Lemon-Tahini Dressing: Place all the ingredients in a blender and puree until smooth. Season with sea salt and ground black pepper.
  2. For the Grain Bowl: In a large mixing bowl, place all the ingredients and toss with the lemon tahini dressing.
