Grilled Portabella Burgers

SERVES:    4

Portabellas delight with a rich, earthy, meaty flavor that makes them a perfect meatless burger. Top them with bright pesto, earthy sundried tomato and gooey mozzarella and put an Italian spin on your cookout menu.


  Ingredients

  • 4 Portabella mushrooms, cleaned and stems removed
  • 1 Tbsp olive oil
  • 4 buns
  • ¼ cup Citarella pesto
  • 4 slices Citarella fresh mozzarella
  • ¼ cup sundried tomatoes
  • Radicchio, for serving
  • Salt and pepper, to taste
  • Citarella sides, for serving

Instructions

  1. Preheat grill or grill pan to medium-high heat. Coat with olive oil.
  2. Season portabella mushrooms with salt and pepper. Grill for 3-4 minutes per side. Top with fresh mozzarella and grill an additional 1-2 minutes until just beginning to melt. Rest for 2 minutes before serving.
  3. Meanwhile, grill buns until just golden.
  4. Spread pesto on buns and top with radicchio; season with salt and pepper. Place cheesy mushroom patties on top, and top with sundried tomatoes.
  5. Serve alongside your favorite Citarella sides and enjoy!
