Almond Panettone Trifle with Fresh Berries and Compote

Our imported Italian panettone is one of our favorite Christmastime traditions. Here, our Almond flavor shines in a holiday trifle—toasted, and paired with pillowy mascarpone whipped cream, fresh berries, and a bright berry compote. The result? Colorful, elegant, and full of festive flavor...all in under an hour.
Ingredients
For the Trifle
- ½ Citarella Almond Panettone, cut into 2-inch cubes
- 2 (288 g) containers of mascarpone cheese
- 1 pint heavy cream
- 1 ½ cups confectioner's sugar, sifted
- 3 packages Citarella Cut Strawberries
- 3 pints fresh raspberries
- 2 pints fresh blueberries
- 1 serving Berry Compote Recipe (see below)
- 1 ½ cups chopped or sliced almonds
- Fresh mint, for garnish (optional)
For the Berry Compote
- 4 cups of clean berries—strawberries (hulled and sliced), raspberries, blueberries, and black berries (feel free to vary to your preference)
- ¼ cup of water
- 1/2 cup of sugar
- Zest and juice of one lemon
- ¼ tsp. sea salt
Instructions
For the Trifle
- Preheat the oven to 325ºF.
- Place the cubed panettone on a parchment-lined sheet-pan and toast in the oven until light brown, about 7-10 minutes. Remove from the oven and cool.
- Place the mascarpone, heavy cream, and confectioner’s sugar in the bowl of a stand mixer and whip until firm, about 4-6 minutes.
- Place the washed berries in a bowl and mix.
- To assemble the trifle, arrange 1/3 of the compote on the bottom of a 10-12 cup trifle dish. Top the compote with a layer of fresh berries; then, the cubed panettone, almonds, and a layer of the cream. Continue with this layering process 2 more times, or until the bowl is full. Garnish the top layer of the trifle with the almonds, fresh berries, and mint.
For the Berry Compote
- Place half of the berries in a medium saucepan with the water, sugar, lemon, and salt. Simmer on low heat 10-12 minutes until the fruit becomes syrupy in consistency. Stir in the remaining berries and cook an additional 3 minutes until slightly softened. Remove from the heat, cool, and refrigerate before serving.
