PRODUCTION/COMMISSARY SOUS CHEF (Hunts Point, BX)

• Check the quality of raw and cooked food products to ensure that standards are met.

• Monitor sanitation practices to ensure that employees follow standards and regulations.

• Check the quantity and quality of received products.

• Order or requisition food and other supplies needed to ensure efficient operation.

• Supervise and coordinate activities of cooks and workers engaged in food preparation in the absence of the Executive Chef.

• Inspect supplies, equipment, and work areas to ensure conformance to established standards.

• Determine how food should be presented, and create decorative food displays.

• Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food.

• Estimate amounts and costs of required supplies, such as food and ingredients.

• Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers.

Requirements:

• Strong staff management and operational skills; supervisory experience preferred

• 4-5 years prior work experience in high volume – upscale production

• Strong work ethic and excellent communication skills

• Ability to multi-task

• Ability to work 5-6 days per week

• Good organizational skills and ability to thrive under pressure

Candidates must be able to read, write, and speak English with proficiency. We are seeking candidates that have high volume production experience in a production/ warehouse environment preferably for high end gourmet stores. The position is located in the South Bronx. This is a full-time hourly position in a 24 hour operation therefore full-time associates must be available to work any and all shifts. Weekends, overnights (6:30pm-3:30am), and holidays are required.
